Ocakbaşı is a traditional Turkish restaurant format where meat is cooked to order over an open coal fire, in full view of the guests. The kitchen isn't separate from the dining room — the grill sits among the tables. The meal usually opens with meze, then continues with skewers and kebabs straight off the fire. Ocakbaşı describes a cooking and service style, not a single dish.

What sets ocakbaşı apart is transparency: you can watch how the meat is handled, when it hits the fire, and how many times it's turned — all from your seat. That openness means the cook's skill has nowhere to hide; the quality of the meal rests directly on whoever is minding the fire.

In Turkey, ocakbaşı culture is closely associated with southeastern Turkish cuisine — Adana and Urfa kebab, liver skewers, and lamb skewers are the classics of the format.

What's the difference between ocakbaşı and a barbecue?

A barbecue is a portable cooking device; ocakbaşı is a fixed, long, deep coal grill built into the restaurant, with the whole service built around it. On a barbecue, meat is often cooked in batches; in ocakbaşı, each skewer is grilled individually, to order, under a cook's direct control. The difference isn't the equipment — it's the format and the timing.

In practice, that means a barbecue meal arrives cooked and complete; an ocakbaşı meal keeps arriving. Meze is already on the table when the first skewer comes out, and the next one goes on the fire while you're still eating. It's not a single "serving moment" — it's a rhythm that stretches across the evening.

Heat management is another difference. An ocakbaşı grill is built to let different cuts cook over different heat zones at once — liver and lamb skewers don't cook at the same intensity.

Where's the best place for ocakbaşı in Antalya?

Ocakbaşı dining in Antalya is concentrated mostly in and around the city centre; the tourist-facing restaurants along the coast usually run a different kind of service altogether. Külhane runs two locations: Külhane Restaurant in Muratpaşa/Yüksekalan, with live music, and Külhane Ocakbaşı in Aksu/Güzelyurt, near the airport.

When choosing, ask yourself: do you want a lively, music-filled evening in the city centre that runs late, or a calmer night by the fire? For the first,Muratpaşa suits better; for the second,Aksu does.

Most ocakbaşı restaurants don't serve lunch. That holds true in Antalya as well — plan around the evening.

What's the closest ocakbaşı to Antalya Airport?

Options near Antalya Airport are limited — most restaurants in the immediate area belong to hotels or the terminal itself. Külhane Ocakbaşı sits in Aksu's Güzelyurt neighbourhood, just behind the IC Airport Hotel, about 800 metres from the hotel — a short transfer for anyone staying near the airport.

What do you eat at an ocakbaşı?

An ocakbaşı meal opens with meze and continues with whatever comes off the grill. The classic order: one or two cold mezes per person (haydari, acılı ezme, humus, şakşuka), then skewers and kebabs from the fire, served with flatbread and salad. The wait for the meat isn't wasted time — the meze is there for exactly that.

Suggested order:

  1. Meze — Külhane serves 8 types, all in the same 200g portion: haydari (garlicky strained yogurt), acılı ezme (spicy tomato-and-pepper dip), humus (hummus), patlıcan salatası (eggplant salad), atom (fiery red pepper dip), şakşuka (sautéed vegetables in tomato sauce), ot kavurması (sautéed wild greens), and Girit ezmesi (Cretan-style olive dip).
  2. Salad — Gavurdağı or çoban salatası (shepherd's salad). For a big table, large portions make more sense.
  3. From the grill — lamb skewer, beef skewer, Adana Kebap, Urfa Kebap, liver skewer, chicken skewer, chicken wings, kelebek (butterflied lamb chop).

At Külhane Ocakbaşı (Aksu location), meze runs 250 ₺ for a 200 gr portion, and grilled mains range from 500 ₺ to 800 ₺. Salads run 250-350 ₺, with large portions at 500-600 ₺. All prices are listed openly on the site — most places in the area don't publish theirs, and we do it on purpose.

How do I book a table at an ocakbaşı?

At Külhane, reservations are made by WhatsApp or phone — there's no online table-booking system. Three details are all you need to send: date and time, party size, and which location. Each branch runs its own number — Aksu: 0546 973 47 88, Muratpaşa: 0532 614 62 70. You'll get a confirmation back.

A reservation isn't always required, but it's recommended for weekend evenings and groups larger than four. Planning a celebration, birthday, or group dinner? Call ahead — since the grill works to order, a heads-up on a large table helps service run smoother.

What time does ocakbaşı open?

Ocakbaşı restaurants are evening venues and typically open in the afternoon. Külhane's Aksu location is open 4pm to 2am, and Muratpaşa 4pm to 3am — both Tuesday to Sunday, closed on Mondays. There's no lunch service. The grill is lit at opening, so the room tends to be quieter early and busier as the night goes on.
